HOW TO MAKE MIRROR ICING?
Today we will prepare achocolate mirror glaze, here is what you will need for preparation:
INGREDIENTS
- 40g water
- 80g granulated sugar
- 80g glucose syrup
- 135g fresh cream
- 200g dark chocolate
- 4g gelatin sheets
PROCEDURE
- Start by softening the gelatin in cold water, then wring it out and set it aside.
- In a pot boil the water with the sugars: the temperature should reach 103 degrees.
- In another pot boil the cream.
- Turn the chocolate and pour it into a one-liter jug.
- When the two ingredients are boiling, combine them and strain them through a strainer into the jug in which you have previously placed the chocolate.
- Mix everything with an immersion blender: try to avoid the formation of air bubbles.
- Now add the hydrated gelatin sheets.
- Yourglossy frosting is ready! Pour the mixture into a container and cover with clingfilm. Let it sit in a cool place for 12 hours.
Warning!Before using theglaze on your cake you must heat it.
HOW TO HEAT THE MIRROR ICING?
Themirror frosting should be heated to a temperature of 30-35°C before being used to frost the cake, but before heating thefrosting you must let it rest overnight in the refrigerator, with the surface covered with foil to prevent it from drying out.
You can heat themirror frosting in a water bath: bring the water to a temperature of 35-40°C and immerse the container with the frosting. It is importantnot to exceed 40°C so as not to risk damaging the frosting and making it lose its shine.

Another method is to heat themirror frosting in a microwave for short intervals of time, stirring well between each pass, until the desired temperature is reached.It is critical not to boil or overheat the frosting, as it may separate or lose its shiny, smooth texture!
WHICH DESSERTS ARE BEST TO SERVE IN A MIRROR GLAZE?
Many cakes can be suitable for this type of decoration, especially cakes with a regular surface:

- Classic cakes, such as chocolate cake, grandma's cake or daisy cake.
- Doughnuts, with frosting the circular shape will stand out much more.
- Filled cakes, you can play with contrasts: for example, a chocolate frosting and a coconut or citrus filling.
- Cheesecake, popular in summer, lends itself very well with fruit frostings.
- Semifreddos in general, can create very interesting fresh contrasts.

HOW TO MAKE COLORED ICING?
Makingcolored mirror frosting is very simple: you can take advantage of the coloring power of the ingredients, such as fruit colors; if you want to make amulticolored frosting instead, but with a single flavor, you can add food coloring.
- Prepare themirror frosting following the procedure above, with the same ingredients.
- Once the frosting is ready and still warm, add the food coloring.
- Mix well, you can help yourself with an immersion blender to evenly incorporate the color. You can divide the frosting into several parts and color them differently, so you can get different colored frostings and make arainbow cake.

Thecolored mirror frosting should be used at the same temperature of 30-35°C as the base frosting to ensure proper flow and adhesion to the cake.
