Discovering Dacquoise

Hello friends of Erre4M and welcome back to our blog!

 

Today we are going to talk about one of the little-known pastry bases: Dacquoise, a meringue with the addition of dried fruit, easy to prepare but very good!

But let's see what the ingredients are:

 

-125g egg white at room temperature

-40g of caster sugar

-94 g white almond flour

-94g icing sugar

-42g dark almond flour

We start by whipping the egg white with a pinch of salt, when it is stabilising we start to add the caster sugar a little at a time and continue whipping until we obtain a creamy mixture. In the meantime, in a separate bowl, mix the almond flour with the icing sugar and sift everything to remove impurities and lumps. When the meringue is ready, incorporate the mixture and the powders, pour everything into a pastry bag and form your shapes on a silicon or baking paper surface.

Then bake at 180C° in a ventilated oven for about 10 minutes.

The characteristic of this base is that baking at a high temperature allows a crust to form on the outside but to keep the inside soft.
