Fruit icing: how delicious
Welcome back to our blog, friends of Erre4M! In today's post, we are going to talk about how to make a fruit icing in a few simple steps.
First of all, let's start with the necessary ingredients:
-95g caster sugar
-75 g water
-65 g fruit purée to taste
-285g glucose syrup
-35 g lemon juice
We start by mixing the caster sugar with the pectin in a double-bottomed saucepan, add the water and fruit puree and bring to the boil. Once the temperature has reached, we take the saucepan off the heat and add the glucose syrup, stirring everything together. After adding the glucose, we boil for a second time. After this step, we let everything cool down to 75° and then add the lemon juice, taking care to mix well. Pour the mixture into a container using a strainer to strain the icing, cover with a lid and then leave the icing to cool in the fridge.
Once ready, it can be used as a topping for various cold desserts.
