These strong and useful rings, thanks to the holes that characterize them, ensure an even cooking and allow you to support the edges of the cake avoiding the collapse, in fact, the microperforation facilitates the evaporation of water during cooking. It also allows the hot air of the oven to hit the product directly, ensuring a better, faster and more homogeneous cooking.
A peculiarity that distinguishes these rings is the edge, which increases the strength of the mold and allows you to work the edge on a rounded surface and easier to manage.
The pastry shrinks in cooking facilitating the'extraction of the product.
Some useful tips for the use of these fantastic wraps:
Prepare the pastry and let it rest in the refrigerator for at least 6 hours, then roll it out to a thickness of 2.5 mm and put it in the freezer for at least one hour.
Cover the shortcrust pastry with the'ring, butter the mold and create strips to fit the edges.
Insert the shortbread inside the band, press it well against the edges and trim if necessary.
Bake at 165°C in a thermoventilated oven.
