The rattan mold gives the classic ribbed rustic bread, also the manual construction allows the dough to breathe during the leavening through the invisible gaps between a plot and the other. In addition to this, the porosity of the wicker absorbs better the moisture of the dough to make it crispier at the end of the preparation. In case of dough particularly watery we recommend to combine the mold to the linen lining.
To prevent the dough from sticking to the mold and consequently compromising its use, it is recommended to flour it well with semolina or rice flour, or, even better, to brush it with water and corn starch.
How to maintain proofing baskets.
Before first use, lightly spray the inside of the proofing baskets with water and dust the baskets with flour (preferably use 50% potato starch). The layer/coating of flour offers extra protection to the basket. Any mold will grow on the layer of flour and the basket material can easily be protected in this way. An enzyme-releasing spray can also be used to protect the wood fibers without losing their respiratory properties and humidity regulation.
Dry the proofing baskets after work, for example on racks or in the oven at a temperature of up to 160°C for 5 minutes. They can be stacked later without hesitation.
Clean the baskets every 4 weeks (without water) only with a cleaning brush. Carefully clean the rattan baskets with water approximately every 6 months (according to needs) and dry them in the oven at 130-140°C for approximately 15 minutes. Refresh the release agent layer only once a year after oven drying.
