Professional Meat Slicers

A slicer for cold cuts can be a valuable ally in any kitchen: it makes it possible to prepare sliced meats and cold cuts for appetizers and starters quickly and easily, but a professional slicer can also be used to slice meat, vegetables, fruit, or bread.

Professional slicers are different from those for domestic use: a slicer for professional use must be handled by experienced users who master the various types of cutting and can cut cured and therefore harder foods.

HOW TO CHOOSE THE RIGHT PROFESSIONAL SLICER

HOW TO CHOOSE THE RIGHT PROFESSIONAL SLICER

On the market you can find small and lightweight or large and heavy professional slicers: the choice of model depends on your needs and the space you have available. There are some criteria for choosing the best professional slicer based on your needs:

  • Manual or electric. The manual slicer is operated by a crank that turns the blade: this type of slicer can be used anywhere, but it does not guarantee consistent cutting precision. The blade of the electric slicer, as the name suggests, is started by a motor: it is usually heavier than manual models but guarantees consistently accurate results in no time.
  • Tilt angle. The tilt of the blade is what distinguishes professional slicers from domestic ones: vertical slicers are those that allow the slices of the cut food to be extracted with tongs, think for example of the deli counter. Gravity slicers are usually those for domestic use and allow the slices to fall directly onto the plate thanks to the slight tilt of the blade.
HOW TO CHOOSE THE RIGHT PROFESSIONAL SLICER

  • Blades. The choice of blade should be carefully considered because it determines the size and type of foods that can be cut by your slicer. For example, a smooth profile is suitable for vegetables or bread, while a wavy profile is suitable for cold cuts and meats. Most slicers allow you to adjust the cutting thickness and rotation speed, but only a few professional slicers have interchangeable blades that allow you to slice various types of foods.
  • Safety. Your safety is paramount, so make sure your professional slicer has guards and locking systems to prevent accidents.

PROFESSIONAL ELECTRIC SLICERS

The size of professional electric slicers can vary depending on the models, but in general the newest ones are compact and lightweight: they can weigh from 4 kg to 14 kg with a footprint of between 30 cm and 60 cm. The most important variable to consider before buying is the motor power of the professional electric slicer: typically it is between 180 W and 300 W. Motor power affects cutting speed and precision, and is a key variable when thick or very hard foods, such as cured meats, need to be cut.

CLEANING AND MAINTENANCE OF SLICERS

To properly clean the blade of professional slicers, it is important to follow a few steps:

  1. The knob of the slicer must always be closed, that is, always set to zero before cleaning.
  2. Use a soft cloth and mild detergent, preferably one that is suitable for cleaning surfaces that will come in contact with food.
  3. Dry the blade of the slicer and all other metal parts well so as to prevent rust from forming.
  4. In case of rust, you can use water and baking soda or lemon juice to remove it. It is always better to monitor the condition of the blades of the professional slicer and make sure they are preserved optimally to avoid possible food contamination.
