The "Napoletana" line was designed to meet the needs of pizza makers who prepare Neapolitan-style pizza, using traditional Neapolitan wood-fired ovens that reach 500 degrees and produce a high number of pizzas.
The dough disc is usually placed onto the peel, guided with both hands, and then skilfully widened and stretched towards the edges of the peel. The perforation of the peel head is designed for these movements: the pattern, circular shape and number of holes allow ideal flour discharge, following the working gestures of the Neapolitan tradition.
