Aluminium guarantees excellent heat transmission and lightness. This material heats up very quickly and consequently transmits heat to the product rapidly and evenly. In addition, the low weight of aluminium combined with microperforations makes these trays incredibly easy to handle compared to similar models in LS or steel.
Microperforation is ideal for convection baking. The convective cycle created inside the oven can pass through the holes and reach the product directly, even in the area in contact with the tray, ensuring better baking throughout.
The Teflon coating is an industrial process based on the spray application of Teflon DUPONT TDM200 with green pigment. This coating is guaranteed for 2000 baking cycles if maintained correctly (read the "USE AND MAINTENANCE" instructions in the details section) and provides professional-level non-stick properties, eliminating the need for natural or chemical release agents.
The "U"-shaped channels maintain the typical shape of the baguette during baking, and the crossbar structure increases rigidity and resistance to heat and weight.
These 60x80 cm microperforated trays are tested up to 280°C and are suitable for baking food products.
Being made of aluminium, they do not require seasoning and are not damaged by contact with water.
As these materials are intended for contact with food products, they must be cleaned after each use and stored in hygienically suitable places.

USE AND MAINTENANCE:
They must not be introduced into the hot oven without the product inside, as thermal stresses deteriorate the non-stick treatments, reducing their duration over time. When handling or stacking, do not scratch the metal surfaces and/or the coating with abrasive tools or brushes. To remove residues of bread or grease, use sponges or damp cloths, or wash with running water at max. 60° and in any case with pressures below 10 bar. Low-concentration alkaline detergents may be used as long as they are suitable for cleaning items that come into contact with foodstuffs and do not contain aggressive substances.
